Mistela is a traditional elaboration, deeply linked to Valencian culture. It is made by adding alcohol to fresh grape must, before it ferments, thus preserving all its natural sweetness.

- Main grape: Moscatel de Alejandría, although other varieties can be used.
- Production: fresh must + wine alcohol, without fermentation.
- Flavor: Very sweet, with aromas of fresh grape, orange blossom, honey, and ripe fruit.
- Alcohol: 15-17%.
- Style: Liqueur-like, unctuous, intended for desserts, after-dinner drinks, or simply to toast to life.

- Production: The must partially ferments, the temperature is controlled or alcohol is added to stop the process at the desired point.

- Alcohol: 12-15%.
