A Little History: The Spirit of Sugarcane

The origin of rum is closely linked to the cultivation of sugarcane, introduced to America by European colonizers in the 15th century. It was on Caribbean plantations that, by fermenting the residues of cane juice—molasses—slaves discovered a rudimentary alcoholic beverage. Soon, this fermentation was refined through distillation, giving rise to what we know today as rum.

For centuries, rum was a currency, a symbol of rebellion, and the drink of sailors, pirates, and settlers. Its history is intertwined with slavery, colonial expansion, and the sugar trade routes, but also with the evolution of the distiller's art and the richness of the territories where it is produced.

How Rum is Made

The base of rum is always sugarcane, although it can be used in two different forms:

  • Molasses: a byproduct of sugar refining, more stable and used in most industrial rums.
  • Fresh cane juice: the base of agricole rum, typical of Martinique and other regions, with a more vegetal and complex profile.

The general process includes:

  1. Fermentation: sugar is converted into alcohol by yeasts.
  2. Distillation: alcohol is concentrated, in a pot still or column still, depending on the style.
  3. Aging: rum rests in barrels, where it acquires notes of wood, spices, and caramel.
  4. Blending: different barrels and ages are combined to achieve the desired profile.
  5. Types of Rum: An Infinite Diversity

Although there is no universal classification, rums are typically divided into:

  • White rum: unaged or briefly aged, filtered to maintain a clear color. Ideal for cocktails like mojitos or daiquiris.
  • Gold rum: with some aging, it offers more body, spicy notes, and a certain roundness.
  • Dark or aged rum: aged for several years in barrels, it presents complexity, toasted notes, dried fruits, cocoa, and vanilla.
  • Spiced rum: flavored with spices such as cinnamon, clove, or vanilla.
  • Agricole rum: made from cane juice, with an herbal, dry, and structured profile.
