Deep Roots: The Origin of Tequila
Tequila is born from a sacred plant: the blue agave (Agave tequilana Weber). Pre-Hispanic peoples already knew its uses and fermented its sap to obtain pulque, a ceremonial drink. With the arrival of stills in the colonial era, agave began to be distilled, giving rise to tequila as we know it.
The name "tequila" comes from the municipality of the same name, in the state of Jalisco. Today it is a Protected Designation of Origin, and can only be legally produced in certain areas of Mexico, mainly in Jalisco and parts of Nayarit, Tamaulipas, Michoacán, and Guanajuato.
How is Tequila Made?
The tequila process is artisanal, technical, and deeply linked to the land:
- Agave Cultivation: Blue agave needs between 6 and 10 years to mature.
- Jima: The jimador cuts the leaves and extracts the "piña," the heart of the agave.
- Cooking: The piñas are cooked (in masonry ovens or autoclaves) to release the sugars.
- Milling: The cooked piñas are crushed to extract the sweet must.
- Fermentation: Yeasts are added, and the must ferments in wooden or steel tanks.
- Distillation: It is distilled twice, to concentrate the alcohol and aromas.
- Aging: If applicable, tequila is aged in oak barrels.
Types of Tequila
There are five main categories, defined by their aging time:
- Blanco or Plata: unaged or with very brief rest in steel. Fresh, herbal, ideal for cocktails or enjoyed neat.
- Reposado: aged between 2 and 12 months in barrels. Rounder with hints of vanilla and wood.
- Añejo: aged between 1 and 3 years. Complex, spicy, ideal for sipping slowly.
- Extra Añejo: with more than 3 years of aging. Deep, elegant, comparable to the best whiskies or brandies.
- Cristalino: aged tequilas filtered to remove color, combining complexity and freshness.
Furthermore, to be considered authentic, tequila must contain at least 51% of sugars derived from blue agave, although 100% agave are the most valued for their purity and quality.
