🍾 What is an ancestral wine?
The ancestral method —also known as pétillant naturel or simply pet-nat— is the oldest way to produce sparkling wine.
The grapes are pressed, fermentation begins, and before fermentation ends, the must is bottled.
The carbonic gas forms naturally inside the bottle, without the addition of sugars, yeasts, or secondary processes.
The result is a wine with fine bubbles, wild freshness, surprising textures, and an unpredictable character, like the wind rustling the vines in September.
