Tasting Notes

Appearance: Bright and clean golden yellow color.

Nose: Floral aromas reminiscent of orange blossom and peach blossom, with intense citrus notes of lime and lemon. Toasted and spicy aromas from barrel aging are present but in the background.

Palate: Wine with very good balance, pronounced acidity, and a touch of tannin that completes the wine's roundness, giving it additional depth and presence. The finish is long and leaves a wonderful memory.

Special Production

Vineyard: Grapes from the original vineyard in Sierra de Enguera, an area where vineyards once abounded, but phylloxera devastated cultivation in the region.

Viticulture: Organic farming, with yields of 4,000 kg/ha.

Harvest: Manual, selecting the best grapes to ensure quality.

Winemaking: The grapes are destemmed, crushed, and left to macerate on the skins for 8 hours before being pressed. Part of the must ferments in stainless steel tanks at a controlled temperature of 12 °C for 25 days, and another part ferments in French oak barrels. Subsequently, the wine is aged on lees for 3 months.

Pairing

Ideal to accompany warm leek tortilla, asparagus salad with quinoa, or sautéed vegetables with fish.
