The Vineyard
The grapes come from up to 23 organic plots on the Quinta San Diego estate, each with different orientations, planting densities, ages, and soil compositions.
The 2024 vintage was marked by a mild winter and a humid spring that favored a long and balanced vegetative cycle. The dry and hot summer reduced yields but allowed for grapes of excellent quality, great aromatic purity, and remarkable natural freshness.
The harvest was carried out in stages between September 1st and 18th, selecting each plot at its optimal ripening moment.
Winemaking
The musts ferment spontaneously with indigenous yeasts, keeping the different plots separate to preserve their identity.
Subsequently, the wine remains on its lees in French oak barrels for a period of between 9 and 12 months, followed by a rigorous selection and blending of the best lots.
Before being released to the market, it rests for a minimum of 6 months in the bottle, achieving a magnificent harmony between fruit, structure, and freshness.
Tasting Notes
It presents a brilliant straw yellow color.
On the nose, it displays citrus and ripe fruit aromas accompanied by elegant notes of dried herbs and withered flowers, providing complexity and personality.
On the palate, it offers a broad and flavorful entry, with a good presence of ripe fruit, an enveloping texture, and a balanced acidity that provides precision and freshness.
The finish is persistent, clean, and harmonious.
Pairing
Perfect for accompanying grilled shellfish, seafood, seasonal vegetables, elaborate salads, light rice dishes, and soft cheeses.
Recommended serving temperature: between 9 and 12 ºC.
