Biología 2022 is a minimally intervened red wine, produced by Casa Los Frailes, a historic winery in the D.O. Valencia, located in Fontanars dels Alforins, a magical land where viticulture has coexisted for generations with biodiversity and absolute respect for the environment.

Born from high-altitude vineyards, on limestone soils and under the influence of a Mediterranean climate with continental traits, this wine is an honest expression of the balance between nature and know-how. The harvest is manual, with selection in the field. Fermentation is carried out with indigenous yeasts, without additives, in stainless steel tanks, working whole grain and seeking to preserve varietal purity. A brief aging in tanks allows the wine to retain its freshness, vitality and the energy of the landscape that saw it born.

Tasting Notes

Bright cherry red color, medium intensity and purplish reflections. On the nose, it offers vibrant aromas of fresh red fruit—strawberry, cherry—accompanied by subtle floral notes, wild herbs, and an earthy background that recalls its soil. On the palate, it is juicy, agile, and light, with soft tannins, marked freshness, and a delicious finish that invites another glass.

Pairing

Ideal for Mediterranean dishes such as escalivada, vegetable rice dishes, white meats, artisan cured meats, and mild cheeses. Its fresh and versatile character also makes it an excellent wine for tapas and informal occasions.
