Blason d'Aussières 2019 is the most representative interpretation of the Aussières estate, owned by Domaines Barons de Rothschild (Lafite), in the heart of Corbières. A wine that captures the essence of the French Mediterranean through a combination of traditional varieties, where Syrah, Grenache, Mourvèdre, and Carignan express all the aromatic richness of the Languedoc garrigue.

Elegant, fresh, and deeply Mediterranean, it is a wine that combines complexity, balance, and authenticity.

The Vineyard

The Aussières estate is located in the rolling hills that descend towards the Mediterranean coast near Narbonne, in the south of France.

The Mediterranean climate is influenced by the sea wind known as Marin, which provides humidity and freshness during the warmer months, favoring a balanced ripening of the grapes.

The 2019 vintage stood out for a warm but balanced summer, allowing for excellent aromatic expression, especially in the Grenache, Mourvèdre, and Carignan varieties.


Winemaking

Fermentation takes place in stainless steel and concrete tanks with temperature control.

A portion of the Carignan is vinified with whole clusters to enhance aromatic complexity and balsamic nuances.

During fermentation, gentle pump-overs are performed to achieve a progressive extraction of tannins and aromas.

Maceration lasts between 15 and 20 days.

Subsequently, 20% of the wine is aged for 10 months in oak barrels, adding complexity without overshadowing the Mediterranean identity of the whole.


Tasting Notes

Deep and brilliant color.

On the nose, it shows great aromatic purity with notes of flint, graphite, and licorice accompanied by the characteristic aromas of the Mediterranean garrigue: thyme, aromatic herbs, black truffle, and delicate hints of eucalyptus.

On the palate, the mineral and herbaceous notes reappear along with nuances of verbena, sage, and laurel.

The evolution brings memories of blackcurrant compote, blueberries, and ripe fruits.

The tannins are perfectly integrated, offering a balanced, elegant, and persistent structure.


Pairing

Ideal with roasted lamb, grilled meats, Provençal cuisine, small game dishes, artisanal cured meats, and aged cheeses.

Recommended serving temperature: between 16 and 18 ºC.
