Vineyard and Winemaking
The grapes come from the Tirillas, La Muela, and Las Pedreras estates, pre-phylloxera vineyards located in Fuente Álamo, at an altitude of between 850 and 900 meters. Vines with an average age of 70 years, planted on calcareous soils.
Harvesting is done manually. Fermentation is spontaneous, with 40% whole grapes, in concrete tanks that mimic traditional lagares. After gentle pressing, the wine undergoes malolactic fermentation in 10,000-liter oak vats, where it ages for 10 to 12 months.
Tasting Notes
On the nose, aromas of ripe black fruit, such as blackcurrants and plums, accompanied by black pepper and sweet spices. On the palate, it is fresh and fluid, with balsamic notes, a pleasant texture, and an agile finish that invites further drinking.
Pairing
Especially suitable for pairing with a cheese board, where its fruity character perfectly complements the creaminess of aged cheeses. It also goes well with grilled meats and simple Mediterranean cuisine.
