The Vineyard
It comes from three emblematic plots of the Sonsierra terroir: La Liende, Diasol and El Bombón, located in San Vicente de la Sonsierra, a short distance from the winery.
Dry-farmed vineyards trained in gobelet, with very low yields of 0.9 kg per vine, which guarantees great concentration. The soils vary between alluvial and clay-calcareous with abundant gravel, providing complexity and structure.
Winemaking
Manual harvest with a rigorous selection of bunches. After destemming without crushing, the wine ferments in oak vats after a cold maceration of about five days.
Fermentations take place slowly at controlled temperatures between 20 and 25 ºC for approximately 20 days, seeking precise and elegant extraction.
Subsequently, the wine ages 20 months in new French oak barrels. It is bottled unfined, unstabilized by cold, and unfiltered, preserving all its purity.
Tasting Notes
Bright, high-intensity garnet red color.
On the nose, it is deep and elegant, with balsamic aromas, mineral notes, and a combination of red and black fruit accompanied by spices and fine toasted notes.
On the palate, it is voluminous and refined, with well-integrated tannins and a perfect balance between ripeness and freshness. Long, fresh, and very persistent finish.
Pairing
Ideal with red meats, game, roasts, complex stews, and haute cuisine.
