The Vineyard
Sourced from the La Serratilla area, at an altitude of approximately 950 meters, within the Cabriel Gorges Natural Park. Trellised, dry-farmed vineyards with 25 to 30-year-old vines planted on sandy-loam soils. Sustainable viticulture following biodynamic principles and moderate yields of 5,000–5,500 kg/ha.
Winemaking
Manual harvest in small crates during the coolest hours of the day, with field selection. Destemming without crushing and prefermentative maceration for 3 to 4 days. 50% ferments with skins in temperature-controlled stainless steel tanks, and the rest in large volume barrels without thermal control. Aged for 6 months on lees in French oak barrels and 3 months in bottle before release. Made without the addition of sulfur dioxide.
Tasting Notes
Bright straw yellow color. The nose reveals white flowers, orange blossom, citrus, and notes of toasted almond and dried fruits.
On the palate, it is flavorful and balanced, with sensations of stone fruit like peach and citrus nuances. Medium body, marked acidity, and a fresh, persistent finish.
Pairing
Ideal with seafood, oily fish, white meats, and seasonal cuisine such as mushrooms or dishes with truffles.
An original and expressive white wine that combines varietal recovery
