Tasting Notes

Appearance: Straw yellow color with greenish reflections.

Nose: Aromas of white fruits such as pear and green apple, accompanied by herbaceous and balsamic notes evoking fennel and mint.

Palate: Fresh and balanced, with good acidity and a long, persistent finish that leaves a pleasant mineral sensation and a characteristic bitter touch.

Special Production

Vineyard: Grapes from 45 to 85-year-old vineyards located in the Montmell mountains, at an altitude of 350 to 400 meters, with calcareous and stony soils.

Viticulture: Organic farming and biodynamic practices, prioritizing the recovery of biodiversity and respect for the forest ecosystem.

Harvest: Manual, carried out on flower and root days according to the biodynamic calendar.

Winemaking: Spontaneous fermentation with indigenous yeasts in stainless steel (80%) and concrete (20%) tanks, followed by 4 months of aging on lees. No oenological additives added and with a total sulfite content of less than 30 mg/l.
