Ca Ses Rosetes Giró Ros 2023 is one of Can Verdura Viticultors' most unique creations. Made by Tomeu Llabrés exclusively with Giró Ros, an ancient native Mallorcan variety recovered at the beginning of the 21st century, this wine represents the winery's commitment to recovering the island's viticultural heritage.
Sourced from small plots cultivated with minimal intervention, it combines the Mediterranean identity of Mallorca with precise winemaking that enhances the elegance, texture, and mineral expression of this practically unique variety.

The Vineyard
The grapes come from two small plots located in Son Borràs de Passatemps (Santa Maria del Camí) and Ca'n Pastó (Santa Eugènia), with a combined surface area of just 1.16 hectares.
The vineyards are located on the characteristic Call Vermell soils, a reddish clay rich in iron that is one of the most distinctive features of the Mallorcan agricultural landscape.
The Giró Ros, a recently recovered variety, acquires a characteristic pinkish or grayish hue on its skin during ripening. Viticulture is carried out with minimal intervention, maintaining cover crops during winter to promote biodiversity and limiting treatments almost exclusively to the use of sulfur as natural protection.
Winemaking
The harvest is done manually in boxes of less than 15 kg, followed by a strict selection of bunches on the sorting table.
After very gentle pressing, with an approximate yield of 55%, the must remains for three days in static settling at low temperature before being transferred to 500-liter French oak barrels, where alcoholic fermentation takes place at moderate temperatures between 20 and 21 ºC.
Starting in January, gentle periodic stirring of the lees is carried out to add more volume and complexity.
The wine completes 7 months of aging, combining new and used French oak barrels with 25% of the volume aged in stainless steel tanks, thus preserving the balance between freshness and texture.
Tasting Notes
It presents a brilliant pale yellow color with golden reflections.
On the nose, it offers an elegant and complex profile with ripe white fruits, Mediterranean flowers, delicate citrus notes, and aromatic herbs, accompanied by subtle notes of vanilla, toasted bread, and an elegant mineral background.
On the palate, it is broad, fresh, and perfectly balanced. Aging on lees provides a creamy texture that combines with lively acidity and marked minerality. The finish is long, saline, and very persistent, reflecting the character of Call Vermell and the unique personality of Giró Ros.
Pairing
Excellent with baked fish, seafood, seafood rice dishes, Mediterranean cuisine, poultry, soft cheeses, Asian cuisine, and dishes made with seasonal vegetables.
Recommended serving temperature: between 10 and 12 ºC.
