Son Agulló Mantonegro 2022 is one of the most representative wines of Can Verdura Viticultors and a true reflection of the potential of the Mantonegro variety in its place of origin. Made by Tomeu Llabrés from a single historic plot in Binissalem, this wine is born with a philosophy of minimal intervention to express the landscape and viticultural identity of Mallorca with the greatest possible purity.
Its extremely limited production and the extraordinary genetic heritage of its old vines make Son Agulló one of Mallorca's great single-vineyard red wines.

The Vineyard
Son Agulló comes from a single plot of 0.7 hectares located in Pla de Buc, in the municipality of Santa Maria del Camí.
The Mantonegro vines, approximately 65 years old, are goblet-trained on the characteristic Call Vermell soils, a reddish clay rich in iron that is one of the hallmarks of Mallorca's agricultural landscape.
The plot is influenced by the embat, the gentle sea breeze that cools the vineyards during the summer and promotes balanced ripening. Production is less than 2,000 kg per hectare, allowing for fruit with great concentration and personality.
Viticulture follows minimal intervention criteria, maintaining cover crops during winter and limiting treatments to the essential use of sulfur to preserve the vineyard's biodiversity.
Winemaking
Harvest is done manually in crates of less than 15 kg, carefully selecting the fruit.
Alcoholic fermentation takes place in a 2,000-liter truncated conical vat, with temperatures evolving naturally throughout the process. No sulfites are added during fermentation, with only a small correction incorporated at the end of winter to preserve the wine's stability.
Maceration lasts for 12 days, with gentle pump-overs similar to pigeage to promote delicate extraction. No fining agents are used, fully respecting the wine's personality.
Subsequently, the wine remains 9 months in used 225 and 600 liter French oak barrels, followed by one month of refinement in a stainless steel tank and four additional months of rest in bottle before its release.
Tasting Notes
It presents an attractive, brilliant, and elegant medium ruby red color.
On the nose, it displays a refined aromatic profile where fresh red fruits, Mediterranean flowers, and delicate notes of aromatic herbs predominate, accompanied by mineral hints and subtle spices perfectly integrated with the aging.
On the palate, it stands out for its extraordinary freshness and balance. The silky texture, fine tannins, and lively acidity support an elegant and very expressive wine, with a long finish where red fruit, Mediterranean herbs, and a delicate mineral character reappear.
Pairing
Ideal for Mediterranean rice dishes, lamb, poultry, traditional Mallorcan cuisine, mushrooms, white meats, artisan cold cuts, and semi-cured cheeses.
Recommended serving temperature: between 15 and 16 ºC.
Son Agulló Mantonegro 2022 represents the essence of Mantonegro and Can Verdura's commitment to the recovery of Mallorca's viticultural heritage. An elegant, precise, and deeply Mediterranean single-vineyard wine that authentically expresses the landscape, history, and identity of Binissalem.
