Cantayano S. Martin 2025 is a white wine produced by Cantalapiedra Viticultores in La Seca, Valladolid, one of the historic territories of Verdejo. It comes from organically grown vineyards at an altitude of approximately 750 meters, on sandy-loam soils with pebbles and the presence of limestone.
Made with 100% Verdejo, spontaneous fermentation, and aging on fine lees, it displays a profound and natural interpretation of the variety. A white wine with freshness, volume, and marked minerality, crafted with the aim that the vineyard always plays a more prominent role than winery intervention.

The Vineyard
Cantayano is born in La Seca, a town in Valladolid historically closely linked to the cultivation of Verdejo. Cantalapiedra Viticultores works approximately 21 hectares distributed across different plots, following a philosophy focused on organic farming and respect for the soil.
The vines dedicated to this wine are between 20 and 32 years old and grow at an altitude of approximately 750 meters. The sandy-loam soils, with pebbles and a calcareous presence, favor drainage and contribute to the tension and minerality that characterize the wine.
Winemaking
The harvest is done manually. Once in the winery, the grapes are destemmed and subjected to direct pressing.
Alcoholic fermentation occurs spontaneously, using the native yeasts of the grape itself, at an approximate temperature of 20 ºC for 20-25 days. The wine also completes malolactic fermentation.
It then remains for between 4 and 6 months in stainless steel tanks on its fine lees, developing greater texture and depth while maintaining the fresh and direct expression of Verdejo.
Tasting Notes
On the nose, it displays a profound and complex profile, with aromas of ripe pear and peach, accompanied by notes of fennel, fresh herbs, and delicate hints of beeswax. In the background, a subtle saline character emerges, adding personality to the whole.
On the palate, it surprises with its purity and concentration. It has considerable volume for a Verdejo, yet retains a marked sense of freshness. Ripe stone fruit combines with vibrant minerality and an acidity that provides tension and balance.
An expressive and textured white wine, where Verdejo shows a less immediate side and one more connected to the soil and the work on lees.
Food Pairing
Its combination of freshness, volume, and minerality makes it especially suitable for grilled fish, seafood, seafood rice dishes, vegetables, poultry, pasta, soft cheeses, and Asian cuisine.
It can also accompany more intense preparations thanks to the structure acquired during its aging on lees.
Cantayano S. Martin 2025 represents the interpretation of Verdejo from the vineyard with minimal intervention in the winery. Fruit, herbs, texture, and minerality construct a white wine with its own identity, far removed from the more commercial profiles of the variety and deeply connected to the soils of La Seca.
