The Vineyard

It comes from the El Val plot, a unique single vineyard with a west orientation that gives the wine a distinctive character.

The vines, approximately 20 years old, are located on clay soils with pebbles in a continental climate with Atlantic influence.

Its cooler orientation delays ripening by approximately 20 days compared to nearby plots, which favors greater acidity, freshness, and aromatic complexity.

Winemaking

Harvesting is done manually. After destemming, the grapes are gravity-fed into stainless steel tanks, where they remain cold for 24 hours.

After pressing and natural settling, the must is transferred to 500-liter French oak barrels, where it ferments and ages for 12 months, with a high percentage of new oak.

On the palate, it is balanced and elegant, with a smooth texture, good freshness, and a long finish that combines finesse and depth.
