Product description
Tio Carracuca is a vermouth that breaks with traditional norms. Produced in the Guadalest Valley by the Celler 3 Tardors project, it originates from an aged red wine and transforms into an aperitif with a unique personality. Its creator, Iván Martínez, sought to revive the Alicantine winegrowing tradition that disappeared after phylloxera, bringing vines back to the terraces where his ancestors' vineyards grew for generations.
The result is an artisanal, bold, and surprising vermouth, perfect for both aperitifs and desserts, where the fruit of the red wine and the aromatic herbs from the Alicante mountains coexist in perfect harmony.

Vermouth type: Artisan red, signature
Wine base: "Memòries" red wine made with four Mediterranean varieties from smallholdings in the Guadalest Valley
Botanicals used: Aromatic herbs from the Aitana, Serrella, and Mariola mountains, as well as spices and natural sweeteners
Production method: Fermentation in stainless steel, malolactic fermentation, and 12 months aging in French oak barrels. Subsequently, maceration for 45 days with botanicals in stainless steel tanks
Alcohol content: 15% vol.
Color: Bright ruby garnet with medium-high intensity
Aroma: Red and black fruits, citrus peel, fennel, sage, cinnamon, hints of caramel and toffee
Taste: Sweet but balanced, where the red wine notes integrate with the aromatic herbs and spices in a long and elegant finish

Production: Only 271 bottles made from the 2019 harvest
Uses and pairing
Ideal for enjoying as an aperitif with olives and citrus peel, although its sweet profile also makes it an excellent dessert vermouth. It can be served neat or slightly chilled, allowing the full complexity of its wine base to be appreciated.
Authenticity and origin
Celler 3 Tardors is much more than a small winery. It is a family project born to revive the viticultural tradition of the Guadalest Valley, where phylloxera wiped out the vineyards more than a century ago. Iván Martínez decided to bring vines back to his ancestors' lands, cultivating Mediterranean varieties with the utmost respect for the landscape and ecology. Tio Carracuca reflects this philosophy: a deeply Alicantine vermouth, made with minimal intervention and extraordinarily limited production.
