Tasting Notes
Intense garnet red color with violet hues. On the nose, it displays aromas of ripe black fruit, notes of garrigue, fine spices, liquorice, and a very distinct mineral background. On the palate, it is structured and deep, with firm and polished tannins, balanced acidity, and a long, elegant, and persistent finish, where the purity of the ungrafted rootstock and the strength of the limestone soil are perceived.
Pairing
Perfect with grilled red meats, small game, traditional stews, mountain rice dishes, aged cheeses, and dishes with truffle or mushrooms. Serve between 16 and 18 °C.
