La Mata 2019 is one of Bertrand Sourdais' most personal and refined expressions in the Atauta Valley. A single-vineyard wine born from century-old pre-phylloxera vines, where extreme altitude and biodynamic sensitivity result in a profound, precise, and immensely elegant red wine.
Dominio de Es represents Sourdais' most intimate vision, a search for purity and emotion where each wine faithfully reflects the Soria landscape and the personality of its soils.

The Vineyard
It comes exclusively from the La Mata site, a single plot located at the bottom of the Atauta Valley slope, at an altitude of approximately 935 meters.
The pre-phylloxera, goblet-trained vineyard has vines over 100 years old, cultivated under biodynamic principles.
The soils combine sands and silty-calcareous profiles over clay, providing tension, depth, and a marked mineral identity.
Winemaking
Winemaking involves complete destemming and a long maceration of 67 days at a controlled temperature between 18 and 27 ºC.
During fermentation, frequent and very precise pump-overs are performed, seeking a fine and elegant extraction.
Aging takes place in two 2012 Burgundy barrels, always respecting the purity of the vineyard and the natural balance of the wine.
Tasting Notes
Deep and complex nose, where ripe red and black fruit combines with mineral, spicy, and earthy notes.
On the palate, it shows great precision and finesse, with silky tannins, vibrant freshness, and a balance reminiscent of great European terroir wines.
The finish is long, elegant, and full of nuances.
Pairing
Ideal with game meats, noble poultry, slow-cooked dishes, and gastronomic cuisine with high aromatic intensity.
A single-vineyard wine that transcends styles and appellations, showing the most elegant, fresh, and profound side of Ribera soriana through extreme viticulture and immensely sensitive winemaking.
