El Cordero y las Vírgenes 2019 is a red wine born from the encounter between irreverence and tradition, a unique work that speaks of landscape, memory, and freedom. A wine that defies conventions and presents itself as a liquid ode to the territory and time.

Produced in Fontanars dels Alforins (Valencia) by Fil·Loxera y Cía., this wine is the result of selecting small plots with calcareous soils, high-altitude vineyards, and a microclimate that provides freshness and balance. The harvest is manual, with spontaneous fermentation in open tanks and partly in used barrels. Its aging extends for approximately 10 months in wooden vats, stainless steel, and barrels, working with minimal intervention and without fining or filtering, allowing the wine to retain all its authenticity.

Tasting Notes

Bright ruby red color with garnet reflections. The nose is fragrant and complex, with aromas of fresh red fruit—strawberry, cherry, pomegranate—combined with hints of dried flowers, Mediterranean herbs, subtle spices, damp earth, and limestone. On the palate, it is elegant and juicy, with fine tannins, vibrant acidity, and an agile flow that leads to a long, mineral, and fresh finish, where the fruit intertwines with the essence of the landscape.

Pairing
