El Viejo 2021 is the deepest, most intense, and majestic expression of the Matsu project, a winery that honors tradition, time, and patience. This wine is born in the D.O. Toro, from centenarian Tinta de Toro vines, planted on ungrafted rootstock, where time progresses at nature's unhurried pace and the roots embed their memory in sandy and pebbly soils.

The grapes come from almost legendary vineyards, over 100 years old, organically cultivated, without herbicides or chemicals. The harvest is manual, with selection in the vineyard. Fermentation takes place with indigenous yeasts in concrete tanks, followed by a prolonged aging of 16 months in French oak barrels, where the wine reaches its maximum expression of power, elegance, and depth.

Tasting Notes

Deep, very high-intensity cherry-red color, with garnet rim. Intense, complex, and enveloping nose, with aromas of ripe black fruit—blackberry, plum, blueberries—, sweet spices, cocoa, leather, tobacco, balsamic notes, and a mineral background reminiscent of hot stone. On the palate, it is powerful, structured, and silky, with fine tannins, excellent acidity, and a long, elegant, and persistent finish, where fruit and aging merge into a whisper of balance and depth.

Pairing

Perfect to accompany red meats, grilled ribeye steak, suckling lamb, game stews, aged cheeses, and acorn-fed Iberian cured meats. A wine that calls for a generous table, time, and conversation.
