Vineyard and Winemaking
It comes from a single 1.2-hectare plot located next to the village of Ibedo, on terraces on the western slope of the Avia River valley, with an east-facing exposure. Vines approximately 30 years old planted on "sábrego" soil, decomposed granite that provides mineral identity and tension.
Harvesting and selection are done bunch by bunch. Fermentation takes place in stainless steel tanks with indigenous yeasts. Afterwards, it remains 12 months on its lees in the same tanks, then refines for 18 months in the bottle before being released to the market.
Tasting Notes
Bright straw yellow color. The nose is complex and expressive, with ripe fruit, white flowers, hints of fine lees, and a marked mineral background. The palate stands out for its energy and elegance, with a dense texture, great depth, and a long, enveloping finish.
Pairing
Ideal with cured meats, aged cheeses, noble fish, and seafood. It also shines with traditional Galician cuisine and high-end gastronomic preparations.
