Greywacke Wild Sauvignon Blanc 2020 represents the most artisanal and complex interpretation of Marlborough Sauvignon Blanc. Created by Kevin Judd, one of the great figures of New Zealand viticulture, this wine breaks with the classic profile of the variety thanks to a production based on spontaneous fermentations and extended aging on lees.

The Vineyard

The grapes come from different selected vineyards in Marlborough, New Zealand's most prestigious wine region for Sauvignon Blanc cultivation.

The maritime climate, with sunny days and cool nights, favors slow ripening that preserves natural acidity and concentrates aromas. The alluvial and stony soils provide tension, minerality, and precision to the wine.


Winemaking

Harvesting is carried out by carefully selecting the best parcels.

Unlike the traditional Marlborough style, the must ferments spontaneously with indigenous yeasts in used oak barrels, without excessive fermentation control, allowing each vintage to faithfully express its personality.

After fermentation, the wine remains for several months on its lees, developing a creamy texture, greater complexity, and an extraordinary capacity for evolution.


Tasting Notes

It presents a brilliant pale golden yellow color with delicate luminous reflections.

On the nose, it displays a complex and elegant profile where aromas of peach, nectarine, quince, and ripe fruit appear, accompanied by notes of toasted bread, dried fruits, beeswax, and delicate smoky and spicy nuances from barrel fermentation. The whole is completed with white flowers and an elegant mineral expression.

On the palate, it is broad, unctuous, and enveloping. The creamy texture is balanced with a vibrant acidity that provides tension and freshness. The ripe fruit, yeast notes, and mineral background evolve into a very long, deep, and extraordinarily persistent finish.


Food Pairing

Ideal with fatty fish, shellfish, scallops, lobster, Asian cuisine, poultry, risottos, mushrooms, soft cheeses, and dishes prepared with butter or creamy sauces.

Recommended serving temperature: between 10 and 12 °C.
