Il Paradiso di Manfredi Brunello di Montalcino 2017 is a dry red wine produced by Il Paradiso di Manfredi in the D.O.C.G. Brunello di Montalcino, Italy. It comes from 2.25-hectare vineyards located on the northern slope of Montalcino, where Sangiovese Grosso vines are cultivated in Pliocene conglomerate soils rich in marine fossils.
The harvest is done manually, with careful selection of grape bunches. The grapes are destemmed and gently pressed. Fermentation is spontaneous with indigenous yeasts in vitrified cement tanks, followed by a maceration of approximately 25 days. Subsequently, the wine is aged for 36 months in large 26-hectoliter Slavonian oak barrels and rests in the bottle for at least 30 months before release.
