Javi Revert Sensal 2023 is a red wine born from absolute respect for the landscape and indigenous varieties of inland Valencia. A wine that looks to the past to project the future, recovering old vineyards, forgotten varieties, and the essence of a territory that breathes authenticity and beauty.

Sourced from dry-farmed plots located between 600 and 700 meters above sea level, on calcareous marl soils, this wine reflects the freshness that altitude and the environment impart to the indigenous varieties. The harvest is manual, with selection in the vineyard. It ferments with indigenous yeasts, using a percentage of whole bunches to provide tension and texture. It is aged in stainless steel tanks and wooden vats, preserving the fruit character, purity, and sincere expression of the terroir.

Tasting Notes

Bright cherry red color, medium intensity, with purplish reflections. The nose reveals a fresh, vibrant, and delicate aroma, with notes of red fruits, raspberry, cherry, and pomegranate, accompanied by floral hints, garrigue herbs, and a mineral background that evokes the calcareous earth. On the palate, it is juicy, agile, and elegant, with fine tannins, lively acidity, and a long, fruity, and slightly saline finish.

Pairing

Perfect to accompany mountain rice dishes, roasted vegetables, white meats, tapas, artisan cured meats, and semi-cured cheeses. Its fresh and light profile makes it an ideal wine for both informal meals and gatherings and celebrations.
