Vineyard and Winemaking

It comes from the Vinya Palau estate, a 10-hectare plot planted in 1991. The Merlot is cultivated on clay-limestone and sandy soils with gravel, in a Mediterranean climate that favors balanced ripening.

Harvest is manual. Alcoholic fermentation takes place in stainless steel vats at 26 ºC for approximately 13 days. Afterwards, the wine begins its aging in 225-liter French oak barrels, where malolactic fermentation also occurs, and remains for a minimum of 12 months, completing its refinement with an additional 6 months in bottle.

Tasting Notes

Intense, deep red color. On the nose, it is complex, with a predominance of ripe black fruit accompanied by herbaceous notes and subtle citrus hints over a slightly toasted background. On the palate, its lively acidity stands out, providing freshness and length, with a fleshy texture and well-integrated sweet tannins.

Pairing

Ideal with duck magret with red fruit sauce. It also pairs well with cod, white meats, and Mediterranean dishes with character.
