Tasting Notes

Appearance: Carmine color with ruby reflections.

Nose: Intense aromas of lavender and concentrated fruit, especially black cherry.

Palate: Round and elegant flavor, with good acidity and silky tannins.

Serving temperature: Between 14 and 16 ºC.

Special Production

Vineyard: Grown on gravelly slopes over a limestone plate, with traditional goblet training and dry farming.

Climate: Continental Mediterranean, with cold winters and warm summers.

Harvest: Manual harvest in 10 kg boxes, selecting bunches with mature stems.

Vinification: Spontaneous fermentation with indigenous yeasts in fourth and fifth year 500 and 600-liter French oak barrels.

Aging: 12 months in the same barrels, seeking a harmonious integration of flavors.

Ideal to accompany cured meats, cheeses, ham, grilled meats, chicken and rabbit paellas, mushroom and truffle dishes, or more complex gastronomic proposals.
