La Servil 2023 is an organic and biodynamic red wine from Bodega Cerrón – Stratum Wines, produced in Fuente Álamo, D.O. Jumilla. It is made with Monastrell grapes from pre-phylloxera vines over 60 years old at 960m altitude on sandy-calcareous soils
The harvest is manual. Part of the stems remain during maceration, fermenting spontaneously with native yeasts in wooden vats. Aging takes place for 12 months in 5,000 L foudres and used 500 L barrels, unfiltered and unfined

Tasting Notes
Intense cherry color with violet highlights. The nose offers fresh red fruits (cherry, raspberry), dried flowers, Mediterranean aromatic herbs, and a marked minerality . On the palate, it is fresh, flavorful, with fine tannins and a persistent, saline, and lively finish .

Perfect with mountain rice dishes, grilled meats, roast lamb, game dishes, and aged cheeses.
