It comes from vines planted between 12 and 100 years ago, on slate and sandy soils, at altitudes between 400 and 750 meters, where mist and rock sculpt its freshness.

Manual harvesting and parcel selection precede separate fermentations in foudres, oak barrels, and concrete tanks. The aging on lees extends for 15 months, achieving a balance where the fruit merges with the mineral memories of the landscape.

Tasting Notes

Bright straw color with golden and greenish reflections. The nose reveals white fruits—apple, pear, melon—fine herbs, and flowers on a mineral and spicy background, with light notes of ginger, fresh grass, and wax. On the palate, it is elegant, with a smooth texture and vibrant acidity, with fatty volume, fine salinity, and a long finish, where ripe fruit intertwines with hints of almond and wet stone.

Pairing

Ideal with seafood (mussels, octopus), fish in sauce, elaborate rice dishes, creamy pasta, mushrooms, soft cheeses, and even delicate poultry. Its freshness and minerality enhance the flavor of marine products and the richness of light dishes.
