The Vineyard

The grapes come from three selected plots on the property: Corderilla, Carravalcavado 2, and Carraboada 2, located in the heart of Ribera del Duero.

Yields range between 3,000 and 5,000 kg per hectare, allowing for high concentration and aromatic complexity.

The selection of plots is carried out each vintage through analytical controls and continuous tastings to determine the optimal harvest time and ensure maximum fruit quality.

Production

Harvesting is done manually, and the grapes are transported in boxes of up to 20 kg to preserve their integrity.

After a second selection at the winery, the bunches are destemmed and transferred to stainless steel tanks for cold maceration prior to alcoholic fermentation.

Fermentation takes place at a maximum temperature of 28 ºC to promote balanced extraction.

Subsequently, malolactic fermentation occurs in new 225 and 500-liter French oak barrels.

Aging extends between 24 and 30 months in new French oak barrels, providing depth, structure, and extraordinary aging potential.

Tasting Notes

Deep, brilliant color of great intensity.

The nose displays remarkable aromatic complexity, combining ripe black fruits, sweet spices, cocoa, roasted coffee, balsamic notes, and elegant mineral hints.

On the palate, it is broad, powerful, and perfectly structured, with noble tannins, great concentration, and extraordinary persistence.

The finish is long, sophisticated, and full of nuances, showing a magnificent balance between fruit, wood, and freshness.

Ideal with high-quality red meats, roast lamb, game, slow-cooked dishes, and aged cheeses.

Recommended serving temperature: between 16 and 18 ºC.
