Los Insensatos – La Condená 2021 was born as an act of rebellion and homage. A unique white wine made from 100% Pedro Ximénez grown in the historic "La Estrella" plot of Pago de Benavente (Montilla-Moriles), at 520m above albero-tosca soils. This last testament of a century-old vineyard was harvested on August 20, 2021, and fermented in concrete tanks with 11 months of biological aging under flor – only 1,974 bottles were released.

Tasting Notes

Pale with greenish reflections. The nose is restrained but deep, with herbaceous notes, fine pastry, and a mineral background. On the palate, it is vertical, with high salinity and a fresh persistence.

Food Pairing

Perfect for grilled seafood, oysters, fatty fish, seafood paellas, warm salads, and light southern cuisine. Its salinity and intensity beautifully illuminate dishes.
