Luis XIV Fondillón is an extraordinary dessert wine from the D.O. Alicante, produced by Colección de Toneles Centenarios. It originates from a single 805L solera barrel, with over 50 years of uninterrupted aging in百年 barrels, recovered from a historic winery in Cañada and Beneixama.

Made 100% from Monastrell, grown dry-farmed at 550–580m altitude. Neither fortified nor filtered: the high alcohol content (≈ 16% vol) and residual sugar (≈ 34 g/l) are achieved naturally, resulting from a slow, prolonged fermentation.

Tasting Notes

Intense mahogany color with brick-red hues and great density. On the nose, it unfolds deep aromas of old wood, black tea, carob, caramel, and rancio, floral, and candied fruit notes. On the palate, it is enveloping, with a sweet entry perfectly balanced by lively acidity, an unforgettable texture, and a long finish with balsamic and earthy nuances.

Pairing

Ideal with intense blue cheeses, foie gras, dark chocolate bars, nougat, and toasted nuts. Also as a luxurious aperitif.
