Fondillón 50 Años “Siempre te esperaré” is one of the most exclusive expressions from MGWines and Bodegas Monóvar, a look into Alicante's historical heritage through one of its most unique wines. Made from overripe Monastrell grapes from the vine itself, it comes from a meticulous selection of old soleras with over half a century of aging.

Time is an essential part of its production here. Decades of rest in historic 19th-century Monovar barrels allow for extraordinary concentration and complexity to develop, resulting in a deep, persistent Fondillón laden with history.

Origin and Production

Fondillón is part of Alicante's great enological heritage and boasts centuries of history. Its identity is intimately linked to Monastrell and the warm, dry conditions of the Alicante region.

For “Siempre te esperaré,” the essence of Monastrell grapes from old vines in Vinalopó is selected, reaching high maturity naturally before harvest.

But the true protagonist comes later: time. Bodegas Monóvar preserves old soleras that have remained for decades in large historic barrels. This Fondillón originates from a selection of wines with over half a century of aging, slowly refined in centuries-old Monovar barrels from the 19th century.

An extraordinarily prolonged aging that transforms the wine and concentrates its character without erasing its origin.


Tasting Notes

In the glass, it shows the depth characteristic of a very long evolution, with an intense, mature, and complex aromatic expression.

The nose unfolds a deep and evocative profile, where hints of nuts, dried fruit, old wood, spices, caramel, orange peel, Mediterranean herbs, and balsamic nuances may appear, forming a tremendously rich aromatic ensemble.

On the palate, it is intense and persistent, with a combination of maturity, concentration, and complexity. Its prolonged aging provides depth and a succession of sensations that linger long after each sip.

It is a wine to be drunk slowly, allowing the temperature and contact with air to reveal its different layers.


Food Pairing

A Fondillón of this age can be enjoyed on its own, as a meditation wine, allowing all its complexity to express itself without accompaniments.

At the table, it finds great allies in cured and blue cheeses, nuts, dark chocolates, almond desserts, and cocoa preparations. It is also particularly interesting with some intense savory dishes and slow-cooked cuisine.

Served at the end of a meal, it can replace dessert and become the final chapter of the experience itself.
