The Vineyard
The grapes come from vineyards located in the Iregua Valley, the slopes of Moncalvillo, and the Montes de Clavijo, at altitudes ranging between 550 and 700 meters above sea level.
The soils combine ferrous and calcareous clays with a sandy component on the surface. This blend provides structure, depth, and volume on the palate, while maintaining a notable freshness.
The vineyards have an average age of 15 years and are cultivated with environmentally respectful viticulture, always seeking the best expression of the terroir.
Winemaking
The harvest takes place at the optimal point of aromatic ripeness. After picking, the grapes are gently pressed in the absence of oxygen to preserve the varietal aromas.
Fermentation occurs at low temperatures in stainless steel tanks. Subsequently, the wine remains 4 months on its fermentation lees, with periodic stirring twice a week to add volume and complexity.
