Olivia Rosé 2022 is a dry rosé wine produced by Bodega Pazo Pondal, in the Condado de Tea sub-zone of the Rías Baixas D.O., Galicia. It is a vinified desire, a tribute to the Atlantic landscape and the ancestral varieties of southern Galicia, transformed into a limited edition jewel.

It comes from the winery's oldest vineyards, where red grape varieties Sousón and Pedral coexist with white varieties Albariño and Treixadura, planted on granite slopes that provide minerality, freshness, and depth.

The harvest is carried out manually and selectively, with an initial sorting in the vineyard itself. The free-run juice is obtained by saignée, which ferments with indigenous yeasts in stainless steel tanks. It then remains 3 months on fine lees, refining its structure and aromatic profile.

Tasting Notes

Soft pink color with pale salmon reflections. On the nose, it delicately expresses fruity aromas of cherry and raspberry, against a floral and mineral background. On the palate, it is vibrant and persistent, with a lively acidity and an elegant texture that reflects the Atlantic soul of its vineyards. Its subtle minerality evokes the sea breeze and wet rock of Condado de Tea.
