Ossian Viñas Viejas Verdejo Magnum 2020 is the purest expression of the historic Verdejo from Ossian Vides y Vinos, produced in Nieva (V.T. Castilla y León). Made from pre-phylloxera centenary vines, this white wine is born from a demanding organic viticulture, based on absolute respect for the vineyard and the soil.

Harvesting is done manually in small boxes, with spontaneous fermentation in 228 L barrels and 600 L foudres, using indigenous yeasts. Subsequently, the wine is aged for 9 months on its lees, developing complexity and texture. The result is bottled in Magnum format and presented in a wooden case, perfect for aging.

Tasting Notes

Bright golden color with greenish reflections. The nose offers an elegant complexity: ripe citrus, white flowers, fennel, and chamomile, accompanied by hints of dried fruits and a mineral background. On the palate, it is voluminous, creamy, and structured, with a lively acidity and a long and saline finish that leaves a lasting impression.

Pairing

Ideal with fatty fish, seafood, fish paella, white meat poultry, dishes with wild mushrooms, or creamy cheeses. It also harmonizes with grilled vegetables and warm salads with nuts or citrus fruits.
