Vineyard and Winemaking

It comes from a single 101-year-old vineyard (planted in 1919), with an area of 1 hectare, located in Elvillar, in Rioja Alavesa, at 600 meters of altitude. Calcareous clay soils and very low yields, around 3,000 kg per hectare, which provide concentration and character.

Alcoholic fermentation is carried out with indigenous yeasts in stainless steel tanks, previously seeking hyperoxidation during pressing. Subsequently, the wine is transferred to clay amphorae and used 600-liter French oak barrels, where it finishes fermenting and remains for 12 months, before blending and bottling.

Tasting Notes

The nose reveals a concentrated aroma of ripe white peach and yellow plum, accompanied by sweet spices, almond, fennel and delicate notes of yellow flowers. On the palate, it is crisp and silky, with a fine and enveloping texture. The finish is long, marked by a stony minerality and soft nuances that provide depth and balance.

Pairing and Serving

Ideal with fatty fish, elaborate seafood, fish rice dishes, poultry, complex vegetable cuisine, and aged cheeses.
