Vineyard and Winemaking

Centenarian vineyard planted in 1920, less than one hectare, located at an altitude of about 600 meters. Sandy soils with quartz, providing drainage, tension, and a marked mineral expression.

Fermentation with indigenous yeasts in French oak vats and open used barrels. Malolactic fermentation and 10 months of aging in foudres and used French oak barrels, always prioritizing the purity of the fruit and the elegance of the whole.

Tasting notes

The nose is fine and expressive, with ripe black fruit, floral notes of violet, garrigue, and a delicate mineral background.
On the palate, it is silky, balanced, and fluid, with very polished tannins, fresh acidity, and a long finish that leaves an elegant and profound sensation, without excessive extraction.

Pairing and serving

Ideal for roasted meats, stews of small game, traditional stews, and aged cheeses.
Recommended serving temperature: 14–16 ºC.
