Palomino Orange Wine 2021 is a sunny nod to the soul of Palomino, that versatile white grape from the south, which remains in contact with the skins for several weeks, revealing an enriched golden hue and a vibrant texture. Its amber character is born from respect, purity, and the light of the vineyard.

Aging: 2–4 weeks of maceration with skins, followed by fermentation in steel or amphorae and resting on lees; bottled unfiltered and unfined, with no added sulfites.
Tasting Notes
Bright amber color, between gold and dried peach. On the nose, it unfurls stone fruit—apricot, quince—citrus peel, an echo of light honey and subtle moss, with a hint of candied orange . On the palate, it displays an unexpected tannic texture, fresh acidity, medium body, and a long finish, slightly bitter, saline, and spicy.
Food Pairing
Perfect for dishes with Mediterranean roots: briny rice dishes, smoked fish, aged cheese, goat cheese, mushrooms, and garden tapas. It combines textures with dishes where its tension and depth shine.
