San Emilio is a hymn to profound sweetness, to the scorching sun of Andalusia and to time suspended in Jerez butts. Made with sun-dried Pedro Ximénez grapes, this fortified wine is a symphony of density, perfume, and velvet. Lustau slowly ages it using the soleras system, transforming it into an after-dinner nectar, dark and moving, like a poem at dusk.

Tasting Notes
Deep ebony color with iodine reflections. Opulent nose with aromas of dried figs, dates, coffee, dark chocolate, and caramel. On the palate, it is silky, unctuous, with an enveloping sweetness perfectly balanced by its natural acidity. Eternal, honeyed, almost meditative finish.
Pairing and Service
Serve between 10 and 12 ºC. Ideal with blue cheeses, foie gras, nut tarts, brownies, or vanilla ice cream. It can also be enjoyed alone, as a contemplative wine, in a large glass and without haste.
