Rafa Cañizares Sauvignon Blanc Vino de Paraje 2024 is born in Alto Vinalopó under the D.O. Alicante, in a privileged enclave close to the natural park of El Puntal de Salinas. In Magnum format, this white reflects a hedonistic vision of the Mediterranean: freshness, breadth and a delicate barrel aging process that provides complexity without sacrificing vivacity.

The Vineyard

It comes from a unique plot of Sauvignon Blanc located in Alto Vinalopó, on soils with a marked limestone character. The Mediterranean environment and the altitude allow the grapes to retain freshness and natural tension, providing balance and varietal expression.

Winemaking

After the harvest, the grapes are kept for 24 hours in cold storage to enhance their aromatic profile. Most of the must ferments in tanks, while approximately 10% ferments in used French oak barrels, where it remains for 6 months. This light wood aging adds nuances and volume without eclipsing the varietal freshness.

Tasting Notes

It presents bright yellow hues that convey freshness. On the nose, it is expressive, with fruity nuances and hints of Mediterranean herbs that evoke both the variety and its surroundings. On the palate, it is broad and pleasant, balanced and gastronomic, with slight hints of oak that complete an elegant and seductive profile.

Pairing and Serving

Ideal for elaborate fish dishes, seafood rice, Asian cuisine or more intense gastronomic proposals. Serve between 8 and 10 ºC.
