The Vineyard
The grapes come from Alto Vinalopó, where Syrah, perfectly adapted to the Mediterranean climate, takes root in poor clay-limestone soils. This natural limitation of the terrain favors contained yields and greater aromatic concentration.
Winemaking
Winemaking begins with grapes cooled in a chamber to achieve a slow and controlled start of fermentation in stainless steel tanks. A precise balance between extraction of primary aromas, polyphenols, and structure is sought. Subsequently, the wine undergoes malolactic fermentation and 10 months of aging in used French oak barrels, refining until it reaches the optimal point of harmony.
Tasting Notes
Visually, it displays an intense color with violet hues. The nose reveals lilacs and violet flowers accompanied by forest fruits such as blackberries, currants, and blueberries, on a spicy background characteristic of the variety, enhanced by the barrel. On the palate, it offers an intense yet gentle entry, with silky and elegant tannins, filling the palate with amplitude and leaving a persistent and harmonious finish.
Pairing and Service
Ideal for red meats, Mediterranean stews, mountain rice dishes, and aged cheeses. Serve between 14 and 16 ºC.
