The Vineyard
The grapes come from vineyards cultivated using heroic viticulture practices in Ribeira Sacra.
Granitic and clay soils, along with the Atlantic climate, provide freshness, tension, and a marked mineral expression to the wine.
Harvesting is done manually due to the difficult terrain and the steep slopes characteristic of the area.
Winemaking
Fermentation is carried out with whole clusters and a prolonged maceration of approximately two months.
Subsequently, the wine rests for 12 months in 500-liter barrels, refining its structure without losing freshness or varietal identity.
Tasting Notes
On the nose, aromas of wildflowers and mountain herbs appear.
On the palate, it is light and elegant, with very fine tannins, great freshness, and a fluid texture that lengthens the wine's finish.
Food Pairing
Ideal with poultry, traditional Galician cuisine, fatty fish, and medium-intensity dishes.
An Atlantic-profile Mencía, fresh and deeply mineral, made with sensitivity and minimal intervention by two absolute references in contemporary Spanish viticulture.
