Castro Candaz A Boca de Demo 2022 is one of the most unique and limited references from the joint project of Raúl Pérez and Rodrigo Méndez in Ribeira Sacra. A single vineyard wine made from old Mencía vines grown on Atlantic slopes where freshness, minerality, and delicacy define its personality.

A profoundly Atlantic, elegant, and nuanced creation that has already become one of the cult wines of contemporary Ribeira Sacra.

The Vineyard

The grapes come from traditional goblet-trained vineyards located at an altitude of approximately 350 meters.

The vines, over 70 years old, grow on granite-slate soils that provide mineral tension and aromatic depth.

The strong Atlantic influence favors fresh, light, and very expressive wines.


Winemaking

Harvesting is done manually, respecting the integrity of the fruit as much as possible.

Fermentation is carried out with whole bunches and prolonged maceration for three to five months in foudres, where the wine remains until bottling.

The wine is bottled without fining or filtering to preserve all the purity and personality of the terroir.


Tasting Notes

Medium-low intensity cherry red color.

On the nose, aromas of red and white fruits such as currants and plums appear, accompanied by white flowers, ferns, and delicate mineral notes.

On the palate, it shows a gentle and elegant entry, with a marked mineral acidity, balanced tannins, and a long, fresh, and precise finish.


Pairing

Ideal with stewed rock fish, Atlantic cuisine, mushrooms, and traditional Galician dishes.
