What the winery tells us...

Winemaking
The grapes were harvested at the point of overripeness with some raisined bunches. They are foot-trodden and placed in open 300-liter barrels for a very slow fermentation at a cool temperature until it stops, followed by an intense pressing with a vertical press.

Aging
Aged in 500-liter French oak barrels.

Production
3000 bottles.

Tasting notes
Dark cherry color, fresh fruit, strawberry, raspberry. Not marked by sugar, on the palate strawberry candy, refreshing and persistent.

Food pairing
Chocolate tarts with red fruits, with fresh goat cheese or Alicante nougat.
