The Vineyard

The grapes come from very low-yielding vineyards distributed among Samaniego, Leza, Elciego, San Vicente de la Sonsierra, Laguardia, and Ábalos, in the foothills of the Sierra de Cantabria.

The vines, with an average age of nearly 60 years, grow on clay-limestone soils under a privileged climate where Atlantic and Mediterranean influences converge. This combination allows for slow and balanced ripening, preserving freshness and concentration.

The harvest is carried out entirely by hand in 12 kg boxes, preserving the quality of the fruit to the maximum.


Winemaking

One of Remírez de Ganuza's most distinctive features is its rigorous selection of raw materials. After harvesting, the bunches remain for 24 hours in cold storage at 4 to 6 ºC, favoring better aromatic extraction.

Subsequently, a manual selection is carried out where only the shoulders of the bunch are used, the upper part that presents more homogeneous ripening and greater concentration.

Fermentation takes place in stainless steel and concrete tanks of different capacities, while malolactic fermentation occurs entirely in barrels.

Finally, the wine spends 26 months in 225-liter French oak barrels, then refined in the bottle before its release to the market.


Tasting Notes

It presents an intense dark cherry color with elegant garnet reflections.

On the nose, it offers great aromatic complexity with prominent notes of fig, blackberry, ripe red fruits, and delicate spicy nuances perfectly integrated with the aging, providing depth and elegance.

On the palate, it is broad, refined, and perfectly structured. The tannins are silky, the freshness balances its concentration, and the finish is long, elegant, and very persistent, leaving a memory of ripe fruit and fine toasted notes.


Pairing

Ideal for red meats, roasted lamb, Iberian pork, traditional stews, game, civet, and long-aged cured cheeses.

Recommended serving temperature: 16 ºC.
