Rochefort 8 is one of the great Trappist beers brewed by the monks of the Abbey of Notre-Dame de Saint-Rémy, in Belgium. Originally created in the 1950s as a special beer for Christmas celebrations, it soon became a benchmark within the Belgian Strong Dark Ale style. Its balance of intensity, malty richness, and aromatic complexity places it among the Trappist beers most appreciated by lovers of Belgian ales.

On the palate, it is rich and balanced, with a slightly sweet entry that evolves into flavors of toasted bread, dried fruits, and spices. The finish is dry, warm, and lingering.
Pairing and serving
Ideal for pairing with aged cheeses, stews, and intense, slow-cooked dishes. It also harmonizes very well with desserts made with dark chocolate or dried fruits. Serve between 10 and 12 °C to fully appreciate its complexity.
