Vineyard and Winemaking
Made with grapes from own vineyards over 30 years old and low yield in San Vicente de la Sonsierra. Harvesting is manual with selection of bunches in the field.
After destemming, alcoholic fermentation takes place for 8 days with selected yeasts, followed by a post-fermentative maceration of 21 days with progressively softer pump-overs to avoid excessive vegetable extraction.
Malolactic fermentation occurs in barrels. Subsequently, the wine ages for 18 months in French and American oak barrels (40% new and 60% up to three uses), with racking every four months. It is bottled unfiltered to preserve its integrity.
Tasting Notes
Intense ruby red color with slight evolution. On the nose, it displays ripe red and black fruit, spicy notes, and well-integrated toasted nuances. On the palate, it shows firm but mellow tannins, good structure, and a balance that combines freshness and depth. Long and harmonious finish.
