From the steep slopes of the Sierra de Bèrnia, in Xaló, comes Sr. Hyde 2023, a deep and energetic red wine that reveals the mineral soul of Marina Alta. The work of Violeta Gutiérrez de la Vega and Alberto Redrado, this single varietal Giró comes from old vines cultivated at an altitude of 650 meters. It is a single-plot wine, rare and unique, with only 325 bottles handcrafted. Ripe red fruit, a smoky background, silky texture, and a subtly earthy finish: this is how Giró expresses itself in its most honest and elegant version.

Tasting Notes

Bright cherry red color of medium intensity. The nose displays aromas of ripe red fruit, spicy notes, dry earth, and a subtle smoky hint. On the palate, it is fluid, elegant, with polished tannins, natural freshness, and a long, slightly mineral finish that invites a second sip.

Pairing and Serving

Recommended serving temperature: between 15 and 16 ºC. Ideal with mountain rice dishes, roasted poultry, mushroom dishes, washed-rind cheeses, or simply to enjoy alone, in peace.
