Supernova Mantonegro 2024 is an explosion of landscape, identity, and purity. It is born from the uniqueness of the indigenous Mantonegro variety, a grape that breathes the sun, sea, and stone of Mallorca, and which expresses itself here with unusual freshness, with the lightness of the wind that sweeps through the high-altitude vineyards.

The wine comes from small plots located in the heart of the island, where calcareous soils and Mediterranean influence shape a vibrant and elegant character. Vines are organically farmed, meticulously cared for, where each cluster is a jewel of the Balearic landscape. Fermentation occurs spontaneously, with indigenous yeasts and minimal intervention, seeking to preserve the fruit's purity. Subsequently, the wine is refined in stainless steel tanks and concrete eggs, avoiding wood, to allow the variety and terroir to speak with absolute clarity.

Tasting Notes

Clear, bright, and luminous cherry red color, almost translucent. The nose is both explosive and delicate, with aromas of fresh red fruit—strawberry, cherry, pomegranate—, Mediterranean herbs—thyme, fennel, rosemary—, wild flowers, and a subtle mineral and saline undertone evoking the proximity of the sea. On the palate, it is agile, fresh, and crisp, with very fine tannins, vibrant acidity, and a long, ethereal finish that invites another sip, like a breath of sea breeze.

Pairing

Perfect with seafood paellas, fatty fish, white meats, artisan cold cuts, warm salads, roasted vegetable dishes, and Mediterranean cuisine. Its fresh and elegant profile makes it an ideal companion for light meals or summer dinners, to the sound of the sea.
